“I feel like I’m having a party” said my 6 year old as she worked her way through spoonfuls of this 7 layer fruit salad. This fruit salad is totally a party in the mouth. It is made with mango, toasted coconut flakes, berries, kiwi and the star here which is the very crunchy Shredded Wheat Frosted Mixed Berry cereal from Post. Now all these ingredients are dressed with delightful Greek yogurt. What’s not to love?

I fell in love with the idea of a 7 layer salad when I attended a Sierra Leonean party at the start of this summer. My niece served me some salad and told me it was a “7 layer salad”. Immediately I heard the words, “7 layer salad” I began to imagine how a transparent bowl with 7 layers of different vegetables would look like.

You know, I hardly hear of a new food idea without trying it out so I’ve been super itchy to make a salad in seven layers. This 7 layer salad is in response to that itch. Do not be surprised if you find me showing you a 7 layer vegetable salad or a 7 layer macaroni salad OR a 7 layer cake. I’m beginning to think in 7 layers.

Let’s talk about the cereal in this salad for a minute. It is the Post Shredded Wheat Mixed Berry Cereal which I got from the cereal isle in Walmart.

The Post new variety of cereal is giving me life and joy. Imagine a Cinnamon Roll cereal or S’mores Bites! All of you, come home to mama!

The cereal adds some much needed carbs to this salad so you can have it as a complete meal. We had it for dinner and we are not guilty. It is bursting with mixed berry flavor. If there’s a perfume in that flavor, I’m totally buying it!

To make the salad, you need 5 fruits of choice, toasted coconut flakes some Greek yogurt and some Shredded Wheat Mixed Berry Frosted cereal (see full recipe below for quantities).

All you need to do is layer them. I started with the strawberries or “orbiri” as my toddler says.

Then keep adding the fruits in the order you want.

Half way through, add the Greek yogurt and spread it out so it is even.

I finished mine with mango and coconut bursting at the top. Because that combo of coconut and mango is epic!

All that’s left to do is to dig in and enjoy your life because what’s life without good food??

7 Layer Fruit Salad

This 7 layer fruit salad is bursting with fruit flavors, textures, crunch cereal and creamy Greek yogurt. This makes a great party/potluck food, breakfast lunch or dinner.
Prep: 30 minutes
Total: 30 minutes
Servings: 6 people

Ingredients  

  • 2 cups Post Shredded Wheat Mixed Berry cereal heaped
  • 2 cups chopped strawberries
  • 2 cups blueberries
  • 2 cups chopped kiwi
  • 2 cups chopped mango
  • 2 cups sweetened coconut flakes toasted
  • 2 cups Greek yogurt plain

Instructions 

  • Arrange all ingredients in a (preferably) transparent bowl. Start with three fruits, add the Greek yogurt and spread so it is level then finish with three fruits. 
  • Enjoy!

Notes

  1. You could use any 7 fruits of choice. More options include pineapple, bananas or grapes. If using bananas, be sure to dip them in lemon or lime juice after slicing so they do not turn brown.
  2. To toast coconut flakes, place sweetened coconut flakes on a skillet on medium heat and gently stir until it starts to brown. It takes about 5-10 minutes.

  1. Wow sounds interesting. I do it with variety of fruits and call it cocktail but not this way. Would be great to try with the added ingredients. Lol your kids will love you to eternity as you keep trying taste wonders. Pics are mouth watering.
