I am a sucker for good pies! I mean the ones with perfectly flaky crusts and insanely delicious fillings. Like my fish pie and meat pie. Can never have enough of those! Today, we are taking it a notch further with these chicken pies. They are perfectly flaky on the outside with tasty chicken filling on the inside. Serve it with a chilled bottle of Coca-Colaâ„¢ for the complete experience.

How are you preparing for the Holidays? I am putting together all sorts of recipes to make this season filled with a variety of good food. Recipes like these cheese omelettes and coconut fried rice are so celebratory and unforgettable. I just love this season because I get to eat eat eat and drink drink drink! Anyone with me on this?

This is one time when I get to cook all sorts of things. In the good old days, while I lived  with my parents, December was when I would do a lot of cooking and taste testing. Sometimes I would get so full from “tasting” that after cooking, I won’t eat anymore. Ha.

But the part I never missed was having a good drink. Like a good bottle of Coca-Cola. Can we just talk about Coca-Cola in glass bottles for a minute? Mr. N and I believe that there is no Coca-Cola better than the ones in glass bottles. We even feel like they taste differently. Ha.

Maybe because this is how we knew the drink in our childhood days. Seeing a glass bottle of Coca-Cola always gets me nostalgic. Somebody give me an opener!

To make them, I start by making some epic chicken filling. Chicken with all the right seasonings. See the full Chicken Pie recipe below to see my epic combo of spices and herbs. And veggies. Always add some veggies to make this a complete meal.

Then I make the dough. Making your own dough from scratch is so easy. Making savory pie dough is so easy. The secret is making sure you have the right proportion of flour to butter. As my food and nutrition teacher taught me in secondary school, one part of flour goes with half part of butter. Works perfectly every single time.

Then dough meets filling and they get married to form chicken pies. I used a round bowl to form these circles then filled them and folded the pies over to form semi-circles.

Then place all the pies on a tray and brush generously with beaten egg. I love the glossy look an egg wash gives to pies.

This is life. This is living. This Chicken Pie hits all the right spots!

This Chicken Pie is a complete meal held in the hand. I can barely eat a second one because the first one fills my tummy. All I need is a bottle of something something to wash it down!

African Chicken Pie Recipe

This chicken pie is perfectly flaky on the outside, filled with bold flavors on the inside and it's a complete meal on its own. Learn my secret to nailing a savory pie crust every time!

Total: 55 minutes
Servings: 10 pies

Ingredients  

For the pie crust

  • 4 cups all purpose flour (half kg)
  • 1 cup unsalted butter (226g or 16 tablespoons) cut into 1 inch pieces
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking powder
  • 1 egg - beaten
  • 1 cup cold water (240 ml)

For the chicken pie filling

  • 1 pound ground chicken (about 500g or half kg)
  • 1 small onion - chopped
  • 2 cloves garlic - minced
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon ginger powder
  • 1/2 teaspoon salt
  • 1 teaspoon chicken bouillon powder substitute with 1 seasoning cube (Maggi) - about 4g
  • 1 tablespoon oil
  • 1/4 teaspoon white pepper
  • 1 teaspoon flour
  • 1 medium carrot - chopped
  • 1/2 bell pepper - chopped
  • 1 stem green onion - chopped

For egg wash

  • 1 egg for egg wash - beaten

Instructions 

  • Heat oil in a pot for about 2 minutes then add in onions to saute for 2 minutes while you stir. Add the chicken and break with a wooden spoon as it cooks so it doesn't clump up.
  • Add a cup of water into the chicken. Add in garlic, ginger, rosemary, curry powder, salt, white pepper and bouillon powder/seasoning cube. Let it cook on low-medium heat until there is only a little water left at the bottom of the pan. Add a teaspoon of flour and mix well. The flour serves as a binder to bind the chicken and liquid together. Let it cook with the flour in for about 2 minutes.
  • Add the carrots, bell peppers and green onion and mix. Turn off the heat.
  • In a large bowl, mix together the flour, butter, salt and baking powder using a fork or pastry cutter. Add in beaten egg and cold water then mix to form a dough.
  • Sprinkle flour on a surface then place one half of the dough on top and roll out to about a quarter inch thick. Use a round bowl to cut circles out of the rolled dough. Place about a tablespoon of the filling in the middle of each circle. Be careful not to overfill them. Cover the circles to form semi-circles then press the edges to seal with a fork. Place pies on tray lined with parchment paper. Repeat the rolling and cutting out process with the rest of the dough.
  • When the pies are all formed, brush them generously with egg wash. Bake in preheated oven at 350 degrees F (180 degrees C) for 20 minutes until golden brown.
  • Serve warm and enjoy with some Coca-Cola!

Notes

1. Please note that the butter in this recipe should be unsalted. If you use salted butter and add more salt, it will turn out too salty.
2. Use the leftover filling to make more pies (double the crust recipe!) or serve with boiled rice. It is so good! Also, the filling freezes well so you could freeze it for future use,
3. To make the pies extra glossy, I always remove them from the oven after 10 or 15 minutes and brush again with egg wash.

  1. Good morning ma’a, i just so love ur chicken pie and all the other pies. But I have a problem. My problem is I don’t have an oven to bake them. Is there no other way cuz i really want to try this chicken pie this Xmas. Am a student and I will want to surprise ma friends too. Pls tell me.

    1. Hi Regine, you can definitely bake without an oven. Here is how to: Place sand in a large pot to cover its base. Heat up the sand then bake on top of that sand with the pot covered. This was how I used to bake when I had no oven. Hope this helps.
