HERE’S WHAT’S UP: MY HEALTHY MEAL PLAN FOR THE WEEK

Meal planning

Whewww! That was a long weekend. I told you I was going on a month of eating clean this August. I’m not going to lie, keeping to that plan has. been. so. hard. For some reason, I just couldn’t find enough motivation as before. I’ve been parking up on carbs and barely eating enough vegetables. But this week, I’m more than determined to eat clean. If not for anything, but at least to prevent the things that leave my bowels from breaking my WC. This is what this week will look like for me:

Monday

Breakfast: Spinach and Potato Frittata
If you’ve never heard the name, Frittata, don’t fret. It’s simply a glorified omelette that is baked. It’s very much like my Egg Cake but this one is made in a skillet (frying pan). I’ll share the recipe with you someday. Maybe later today? Tomorrow? We’ll see!
Lunch: Stir Fry Mushrooms and Boiled Brown Rice
I’ll be making the mushrooms exactly the way I make my Stir Fry Shrimps.
Dinner: Errrm any salad goes (without the waistline enhancing dressing!)

Tuesday

Breakfast: Breakfast Parfait
I’ll simply layer Greek yoghurt, granolas and fruit in a cup and enjoy my life!
Lunch: Corn Chaff
This is a delicious one pot dish featuring mainly corn and beans. Simple, yummy, vegetarian and healthy.

Wednesday

Breakfast: Oatmeal cooked in Coconut Milk (Oh coconut!)
Lunch: Kwacoco Bible with salad on the side.
Kwacoco Bible is a Cameroonian dish consisting of cocoyams mixed with fish, crayfish, green leaves then wrapped in leaves or foil and steamed. Delicioso!


Thursday

Breakfast: Breakfast Parfait just like on Tuesday

Lunch: Grilled fish and baked after Irish potatoes. Yum!

Friday

Breakfast: Whole wheat toasted bread and guacamole (mashed avocado).

I intend to bake the bread fresh that morning if I don’t quarrel with my alarm clock.
Lunch: Lentil stew and brown rice.
As you can notice, I skipped putting the dinner on each day to allow room for leftovers and improvisation. I also planned based on the ingredients I have on hand. I need to get a few more things, though. They include:
  • Greek yogurt
  • Fresh coconut milk
  • An abundance of fruits
That’s my plan for the week, friends. Hope it inspires someone somewhere to plan their meals.
In other news, this scripture: 

“Then Jesus told his disciples, “If anyone would come after me, let him deny himself and take up his cross and follow me.” Matthew 16:24

These things jump at me:

1. Deny yourself
2. Pick up your cross
3. Follow Me

It doesn’t seem like the easiest thing to do and in fact, it is not. But that is where real life and joy is. When we let go of ourselves, and of the things that clutter our lives. When we let go of sticking to this world as though it is our eternal home. When we look forward to something greater and better which is living for Him. May God help us deny ourselves daily.

That’s what’s up with me, friends. I hope your week comes with so much joy, dying to self and fulfilment.

  2. I've been wanting bean pudding now for ages but I keep postponing the decision to wash the beans. Lol

  3. Lovely! …I try to eat clean too but prep time is my issue. Greek yoghurt and strawberries is my go-to breakfast. Salad without dressing is the last thing I eat. I always want grilled fish, some fancy healthy food even beans pudding but I just don't have the time. So I just eat carbs in between.*shrugs*

  5. You know what I said when I saw Monday's breakfast. "No be Nigeria she dey!" lol. To be honest, I have to search Google to know what parfait looks like. Oyibo and food name tho!
