My First Attempt at Peanut Butter Cookies!

So I had a significant amount of peanut butter (groundnut paste) at home and I was wondering what I was going to do with it. We rarely use it in sandwiches so it has been sitting idle in my cabinet for a while.

Then I watched a MasterChef (Yes, I love MasterChef!) episode in which there was pressure test to make something stunning using Peanut Butter and Jelly. After seeing the array of desserts that were made, I decided to put my peanut butter to work.

I scanned through the cyberspace for recipes. At the end of the day, I came up with the most delicious peanut butter cookies. I am pretty proud of myself.

Peanut Butter Cookies

Prep time: 30 mins
Cook time: 15 mins
Total time: 45 mins

Ingredients

1 3/4 – 2 cups of flour
3/4 cup sugar (or more)
Half teaspoon baking soda
Half teaspoon baking powder
I butter stick
1 large egg
Half teaspoon salt
1 teaspoon vanilla
1 cup smooth peanut butter

Instructions

Cream butter and sugar in a large bowl.
Beat egg and add in. Mix well.
Add in vanilla and peanut butter and mix into a smooth paste.
Add flour, baking powder and baking soda and mix until it forms a smooth dough.
Take a portion of dough and roll into a small ball, a little smaller than a golf ball.
Press it between your palms and place on baking tray.
Repeat process until dough is finished.
Use a fork to press and create criss-cross patterns on the cookies.
Bake for about 10-15 minutes until cookies are slightly brown.

Notes:

I used less sugar because I am cutting down on my sugar intake. If you wish, use up to a cup of sugar. When you form the balls, you could equally roll them in some sugar before placing them on the baking tray.

This is one very easy recipe and the cookies are irresistible. My kids loved them! Try it and tell me how it goes in the comments section.

  1. Ohlalalalala! My dear Precious! Just removed these cookies from my oven, my house smells peanuty and the cookies are finishing before they will get cooled
    Will be making another batch shortly, thanks so much!
    Can I double or triple the recipe and have same results?

    1. Hi Nancy, I am sure you can since peanut butter is basically ground peanuts. Be sure to use groundnut paste made with only salt. If you use one containing pepper plus other seasonings/spices it will yield an off taste.

  4. Hmmm auntie Pre, I made this over the christmas holidays and it is now a stable in my home. I love you for putting up these recipes. I have done quiet a good number of them and almost everyone in my house can make and love peanut butter cookies and that pain au lait. Hmmm, we make them now without looking at the recipes again.
