This Red Cabbage Slaw is fresh, crunchy and so colorful. It is a great side dish and also a great topping for burgers and tacos. A good make-ahead salad!

Ingredients
  • 4 cups sliced red cabbage
  • ½ cup shredded carrot
Honey mustard dressing
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • ½ tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil or avocado oil
  • ¼ teaspoon salt
  • teaspoon white/black pepper
Instructions
  1. Place cabbage and carrot in a large bowl

  2. Place all ingredients for the dressing in a bowl then whisk together.

  3. Pour the whisked dressing over the cabbage and carrots. Toss well to combine.

  4. Serve immediately or cover and keep in the fridge until ready to serve.

This Red Cabbage Slaw will keep in the fridge for 2-3 days.
