Red Cabbage Slaw with crisp red cabbage, sweet carrots, and a tangy dressing to tie it all together. This slaw is great as a side dish or for topping burgers or tacos. So crunchy, fresh, and made with no mayo!

I love a good easy vegetable salad so this red cabbage slaw is right up my alley! I had to make this when my husband purchased an abundance of red cabbages and I had to use them.

I thought they would be great in a slaw! And I wasn’t wrong, red cabbage makes really good slaw! Serve this slaw alongside Grilled Onion Cheddar Burger for a satisfying meal.

If you are wondering if you can use red cabbage for slaw, know that you totally can! Plus that bright purple color on the cabbage is a bonus.

I mostly add red cabbage to regular coleslaw but in this Red Cabbage Coleslaw recipe, red cabbage is the star of the dish and it really shines bright!

Red Cabbage Slaw Ingredients

Red Cabbage. Use a mandolin slicer or the slice side of a box grater to easily slice the red cabbage. Here is a great tutorial on how to slice cabbage using a mandolin slicer.

Carrots. You need shredded carrots for red cabbage slaw. Shred the carrots using the shred side of a box grater or you could also buy and use pre-shredded carrots.

Honey Mustard Dressing

The dressing for this red cabbage slaw is a honey mustard dressing. It is tangy, slightly sweet, and on the lighter side as no mayo is used. The ingredients for the dressing are honey, Dijon mustard, freshly squeezed lemon juice, olive or avocado oil, salt, and pepper.

How To Make Red Cabbage Slaw

Making red cabbage slaw is quite easy! Simply combine sliced red cabbage and shredded carrots in a large bowl. Mix together all ingredients for the honey mustard dressing and pour over the shredded vegetables. And there you have it! Easy Red Cabbage Slaw!

How Many Calories in Red Cabbage Slaw?

Only 40 calories per serving. 1 serving is about half a cup.

Optional Add-Ins for Red Cabbage Slaw

1. For a touch of green, consider adding in some chopped parsley or chopped green onion.

2. For more flavor and bite, consider adding in some chopped onion.

Red Cabbage or Purple Cabbage?

“Is it red or purple cabbage?” you may ask. This cabbage mostly has a deeply purple color but it is widely referred to as red cabbage. This is probably because, in some areas, the cabbage grows to be red depending on the soil it grows in.

Red Cabbage Slaw

This Red Cabbage Slaw is fresh, crunchy and so colorful. It is a great side dish and also a great topping for burgers and tacos. A good make-ahead salad!

Servings: 6 servings

Ingredients  

  • 4 cups sliced red cabbage
  • 1/2 cup shredded carrot

Honey mustard dressing

  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil or avocado oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon white/black pepper

Instructions 

  • Place cabbage and carrot in a large bowl
  • Place all ingredients for the dressing in a bowl then whisk together.
  • Pour the whisked dressing over the cabbage and carrots. Toss well to combine.
  • Serve immediately or cover and keep in the fridge until ready to serve.

Notes

This Red Cabbage Slaw will keep in the fridge for 2-3 days.
