You guys, one of the things I love about California is the abundance of avocado. I just love seeing lots of avocado at the grocery store. And they are on the cheaper side too!

So we’ve been eating avocado like crazy! In guacamole, just sliced on the side of meals and in salads. And one of my favorite avocado-filled salads is this Avocado Egg Salad made healthier with no mayo yet perfectly creamy and so tasty!

To make the salad, you need a few simple ingredients: hardboiled eggs, avocado, lime juice, cilantro or parsley and some salt and black pepper.

Ingredients for Healthy Avocado Egg Salad

Simply chop the hardboiled eggs (after peeling of course!) then you chop the avocados too and slightly mash. Combine the eggs and avocado with chopped parsley/cilantro. Put in some lime juice with salt and pepper to taste then you give it a good mix.

Voila, you have a healthy avocado egg salad!

It is ready in no time and it is so good! My kids ate their Avocado Egg Salad with whole wheat bread in no time and they didn’t hold back on telling me how good it was. Winning meal!

Ingredients  

  • 2 ripe avocados
  • 4 hardboiled eggs
  • Juice of one lime
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions 

  • Chop avocado then place in a bowl and lightly mash. Chop hardboiled eggs and add to avocado.
  • Add the lime juice, salt and black pepper. Mix well to combine. Serve over toast.
