    PERFECT GRILLED CHICKEN

    Hands up if you LOVE quick meals. I can't do without quick meals because you know, on some days, there is just no time for chopping, stirring, sauteeing, simmering and all the sort of things that happen in kitchen. Some days, we want good food but we don't have the time to make delicious happen. That's where this perfect grilled chicken made in the oven comes in.

    You only need about 10 minutes to prep the chicken then place it in your fridge to marinate for at least 30 minutes or actually just go ahead and place it in the oven to grill. I tell ya, it still tastes so good if you do not have time to let it marinate. Since we are talking about saving time here, I would say rub the spices over your chicken the day before and place in the fridge to suck in the flavours. Or rub the spices on the chicken in the morning and grill in the evening. Or, rub the chicken with spices and grill right away!

    You see, in this recipe I used powdered garlic, ginger and paprika as spices because I love the crust the dried spices give to the back of the chicken. But if you wish, you could use fresh garlic and ginger. If using fresh spices, feel free to add in some herbs: parsley, basil and a hint of rosemary. Also feel free to throw in a little cayenne pepper if you want some heat. I make mine without the heat because my girls won't eat if they smell pepper.

    I serve this with fried ripe plantains or fried potatoes for a quick dinner. My kids love it! I published a video on my YouTube channel in which I walk you through the process of making the chicken. Make sure you subscribe to my channel so you do not miss any of my cooking videos.

    I normally start by rinsing my chicken thoroughly then patting it dry with paper towel. I used chicken drumsticks here but chicken thighs are a great choice too.

    Make a mix of all your spices and seasonings then rub them generously over the chicken. Let the chicken marinade anywhere from 30 minutes to overnight then you place on a tray to grill in your oven.

    Does it get easier than this? I love eating it with some pepper sauce as a way of compensating for the lack of heat in the chicken.

    This is a quick and easy grilled chicken recipe. The chicken is rubbed the perfect mix of dried spices then grilled in the oven. It is crispy on the outside, tender on the inside and so tasty!

    Ingredients
    • 5 pounds chicken drumsticks rinsed and patted dry about 2.5 kg
    • 1 tablespoon garlic powder
    • 1 tablespoon ginger powder
    • 1 tablespoon onion powder
    • ½ teaspoon white pepper
    • 1 ½ tablespoon paprika
    • 1 teaspoon salt
    • 2 small Maggi cubes (substitute with chicken bouillon powder)
    • ¼ teaspoon cayenne pepper
    Instructions
    1. In a large bowl, mix all spices and seasoning. Put in chicken and rub the spices all over the chicken. Let the chicken marinate anywhere from 30 minutes to overnight or grill right away.

    2. Grill in a preheated oven at 400 degrees F (200 degrees C) for about 50 minutes to one hour, until the chicken is golden brown and thoroughly cooked.

    3. Serve with a side of choice!

    For this recipe, I use the baking function of my oven. Not the broiler.
